What to do on a beautiful fall day…bake an apple pie!
Well it’s almost Thanksgiving so I figured I might as well get into the spirit of things by baking an apple pie today. Apple pie is one of Papa Birds favourites and as much as I enjoy a good apple pie, I have to say I’m not the most experienced on the pastry front. But I gave it a go and put my own little twist on it!
Papa Bird and I eat mostly gluten free and I always enjoy trying to bake gluten free just for the challenge of it. Now trying to make a gluten free pie crust is super tough. I’ve tried it once and it tasted alright but the texture just wasn’t there - especially on something like a pie where the flaky crust is the best part! So, I decided to just completely scratch the pastry pie crust and I went with a gluten free sugar cookie crust. Reasoning? Well I have an awesome sugar cookie recipe that makes insanely delicious cookies whether gluten free or regular so I knew that taste would be on point. Second, it’s super easy to roll out and holds its form when trying to lift it onto the pie dish. (Nothing more annoying then rolling out dough and having it break or fall apart as your trying to get it from counter to pie plate.). So here is what I did for the crust:
Sugar Cookie Crust Recipe: (makes 1 pie with top crust cover)
- 3/4 cups butter
- 1 cup sugar
- 2 eggs
- 1/2 teaspoon vanilla
- 2.5 cups flour (for gluten free flour - see my recipe below)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Directions: Cream butter and sugar together until smooth. Beat in eggs and vanilla. Stir in flour, baking powder, and salt. Cover and chill dough for at least an hour or overnight.
Gluten Free Flour Mix:
- 6 cups rice flour
- 2 cups potato starch
- 1 cup tapioca starch
- 2 tablespoons xanthin gum
Now because I used a cookie crust, I didn’t want my filling to be overly sweet. Normal pie crust doesn’t have a ton of sugar in it and obviously the sugar cookie crust does. So here is what I did for the filling:
Apple Pie Filling
- 7 apples
- 1/4 cup sugar
- 2 tablespoons flour
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 tablespoons melted butter
Directions: Peel, core and slice apples thinly. Place them in a large bowl and add all remaining ingredients. Mix until apples are evenly coated.
Now, once you have your cookie crust rolled out and placed in the pie dish, add the apple filling and cover the top with the remaining dough. Make sure to add slits for steam to escape. I added an egg wash (egg and a bit of milk mixed) just to get a nice brown colour on the top. Bake in the oven at 300C for 90min or until cookie crust is evenly browned and apples are tender.
And yay! That’s it! Super easy and hopefully delicious!
